Cheeseburger Soup

A creamy cheeseburger soup with ground meat, potatoes, vegetables, and cheddar cheese, made without canned soup or packaged seasoning mixes.

Ingredients:

  • 1 lb lean ground meat
  • 2 medium potatoes, cubed
  • 1 sweet potato, cubed
  • 1 medium onion, chopped
  • 2–3 carrots, chopped
  • 2–3 celery stalks, chopped
  • Beef or chicken broth, enough to cover the potatoes and carrots
  • Onion powder, to taste
  • Garlic powder, to taste
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 2 cups heavy cream
  • 3 tablespoons potato starch, optional
  • 3 tablespoons cold water, if using potato starch

Instructions: 

  1. In a Dutch oven or large pot over medium heat, sauté the celery and onion until softened and the onion is translucent.
  2. Add the ground meat, onion powder, garlic powder, salt, and pepper. Cook, breaking up the meat, until cooked through. Drain excess fat if needed.
  3. Add the potatoes, sweet potato, and carrots. Pour in enough broth to just cover them. Bring to a boil, then reduce the heat and simmer until the vegetables are tender.
  4. Reduce the heat to low and stir in the heavy cream.
  5. For a thicker soup, mix the potato starch with the cold water until smooth. Stir the mixture into the soup.
  6. Gradually stir in the cheddar cheese until melted. Heat gently until the soup reaches your desired thickness, avoiding a hard boil. Serve and enjoy!

Tips & Substitutions: 

  • Use beef or chicken broth, depending on your preference.
  • Leave out the potato starch for a thinner soup.
  • Chop the vegetables ahead of time and refrigerate until ready to cook.
